Sunday Funday

Last Sunday (Mother’s Day) sparked an idea. My mom and I set a goal for ourselves: go take a walk or hike a trail every Sunday and after our walk/hike we will go try a new breakfast place. (We both love breakfast). So, today was our first official Sunday Funday.

My mom picked Folsom Lake as our walk location and Early Toast as our breakfast location. (We noticed Early Toast on our Mother’s Day walk when it was packed with customers. Kind of an unusual thing to see in our small town.)

It’s safe to say that after returning from my travels in Europe I was feeling a little restless in good old Northern California. Watching reruns of Friends in the middle of the day was just not cutting it for me, so when my brother, Alex, invited me to go to Santa Cruz with him to go visit our oldest brother, Greg, I jumped at the opportunity. If I couldn’t travel throughout Europe at least I could travel in California.

On Friday afternoon, we jumped in Alex’s truck and drove a couple of hours to one of the the surf capitols of the U.S. Unfortunately for both of my brothers, the surf wasn’t good this weekend, luckily there is still plenty to do in Santa Cruz (like going to see an SC Warriors game!)

This was a perfect weekend to test out my brand new Nikon D3200 that I received for my birthday! While my brothers were out working all weekend, I was out playing with my camera! Here are a just a few of my favorite pictures I was able to take!

A Warm Spring Evening

To me, nothing says warm weather better than eating dinner outside with your family. So my brother and I decided to whip up a few of  Undressed Skeleton’s Zucchini Pizzas (found here).



Since my brother was giving up pizza crust in exchange for zucchinis, I compromised by letting him put extra cheese on these “pizzas”. In addition to the extra cheese, we also added mushrooms and chicken.

These little pizzas took about 45 minutes to prepare and cook, but this gave us time to listen to some Zac Brown Band while sipping on a beer. We added a light salad topped with avocado, lentils, and feta to match our light spring dinner. These zucchinis turned out to be a delicious hit, and will definitely be put on repeat sometime soon!ImageImage
